I loaded a lat/long base map and converted it to State Plane, but I still see lat/long coordinates in the status bar. Why?

The coordinate units shown in the status bar are independent of the map projection.

You can change the units shown in the status bar with the Tools | Options command. Go to the Units tab and change the Coordinate display units to the desired coordinates.
