You could fill in holes of missing data in your grid or DEM file, depending on if the data is really missing or if there's a known NULL value in those areas.
If the data truly is missing, you could use the Grid | Convert method to convert the DEM to an XYZ DAT file. Then use Grid | Data to regrid the data using the Nearest Neighbor gridding method using the same grid spacing as the original DEM file. Regridding the data will fill in the holes (if they really are holes and not filled in with NULL values, like -9999).
If those areas are filled with NULL values, and you don't know what data to insert in there, you could open the DAT file in the Surfer worksheet, sort on Column C, delete all the rows with that NULL value in Column C, resave the DAT, and go to Grid | Data to regrid with Nearest Neighbor (using the same grid spacing as the DEM). Make the maps from the GRD file.
If those areas are filled with NULL values and you do know what data value you want to use to fill in those areas, convert the DEM to an ASCII grid file (Surfer 6 Text Grid). Open the grid file in the Surfer worksheet, and use the Edit | Replace function to replace all the current NULL values with whatever value you want. Resave the grid file and use the grid to create your maps instead of the DEM.
